Almonds

Recipe for Almendrados

This recipe for almendrados is super easy, very quick to prepare and requires very few ingredients.

Ingredients:

• 300 g. ground almonds
• 250 of Fairtrade coconut sugar
• grated lemon peel
• one teaspoon ground cinnamon
• 2 eggs
• the egg white to stiff peaks

To decorate:

Whole, peeled and toasted almonds.

Elaboration:

Mix the sugar with the almonds, the lemon zest, the cinnamon and the two egg yolks without beating, working it but not too much, until it is a homogeneous mass. Add the egg whites to stiff peaks and mix.
Leave the dough to rest for 15 minutes.
Preheat the oven to 150ºC.
Remove the dough after resting and roll into small balls.

Place the balls on the baking tray lined with baking paper, leaving space between each one.

When they are all ready, decorate them with a toasted almond.

Bake in the oven for 20 minutes at 150ºC at a medium temperature.

If you like them nice and crispy, you can leave them in the oven for 5 more minutes.
We let them cool before consumption and accompany them with a delicious Fairtrade coffee 😉.
