Panellets are the most typical sweet of the Chestnut Festival in Catalonia, a classic autumn treat made with almonds, sugar and tradition. In this recipe you will learn how to prepare them at home with organic ingredients in three irresistible flavours that will fill your table with colour and flavour.

Preparation

Follow these step-by-step instructions and you will see that it is not complicated. In no time at all you will have panellets that are crunchy on the outside, soft on the inside and with irresistible autumnal flavours.

Preparation of the panellet

  1. Mix all the ingredients together until a homogeneous dough is formed into a ball.
  2. Leave to stand in the fridge for at least 2 hours, but if you can wait, it is better overnight.
  3. Once rested, divide the dough according to the flavours you want to prepare.

For the panellet with cocoa chai

  1. Add a dessert spoon of cocoa chai and some cinnamon sugar. Mix well.
  2. Form into balls and place on a baking tray.
  3. To decorate, cover the panellets with cocoa chai, as if they were truffles.

For the panellet with orange and cinnamon

  1. Add the zest of one orange and a dessert spoon of cocoa with orange and cinnamon.
  2. Mix well and form into round or oval balls.
  3. To decorate, melt chocolate pearls in the microwave for a few seconds and partially dip the panellets in the chocolate.
  4. Sprinkle with cinnamon sugar.

For the panellet with coffee

  1. Dissolve a small spoonful of instant coffee in half a cup of hot water, making sure it is very strong.
  2. Integrate the coffee into the dough and form into balls. If you get creative you can shape them into coffee beans.
  3. Decorate with icing sugar.

Once the flavours have been prepared, bake in the oven at 200 °C for about 10 minutes, and now you can enjoy some delicious and original panellets!
