Pecan, chocolate and coffee cake

For 6-8 persons

An intense and aromatic cake, with the crunchy texture of pecans and the deep flavour of chocolate and coffee. A recipe by @drabeatiful that combines energy and pleasure in every bite, perfect to accompany a coffee or share in a special snack. Its balance between the creaminess of the filling and the smooth cocoa base makes it an irresistible dessert.

Ingredients

For the bark:

  • 30 g of vanilla flavoured vegan protein
  • 30 g chocolate flavoured vegan protein
  • 60 g almond flour
  • 20 g pure cocoa powder
  • 1/4 teaspoon salt
  • 1 egg

For the filling:

  • 2 eggs
  • 80 ml Greek coconut yoghurt (or unsweetened vegetable version)
  • 1 tablespoon of freeze-dried decaffeinated coffee
  • 20 g vanilla-flavoured vegan protein
  • 150 g of quartered pecans
  • 80 g bain-marie melted dark chocolate 100%
Preparation

Preparation of the bark:

  • Preheat the oven to 180 °C.
  • In a bowl, mix the proteins, almond flour, cocoa and salt.
  • Add the egg and mix until a homogeneous dough is formed.
  • Spread the mixture into a round or rectangular baking tin lined with baking paper.
  • Bake for 10-12 minutes, until the base is slightly firm.
  • Remove from the oven and leave to cool while you prepare the filling.

Preparation of the filling:

  • In a large bowl, beat the eggs together with the yoghurt, decaffeinated coffee and protein until smooth and evenly creamed.
  • Add the melted dark chocolate and stir into the mixture with a stirring motion until a thick, pudding-like mixture is formed.
  • Stir in the chopped pecans and mix lightly.
  • Pour the filling over the cooled base and decorate with 100% chocolate chips or some whole nuts.

Baking and finishing:

  • Bake for about 40 minutes at 180 °C. Halfway through baking (after 20 minutes), cover the surface with baking paper to prevent over-baking.
  • Allow to cool completely before unmoulding; when set, the filling will take on body and a firm, creamy texture.
